The light roast vs dark roast debate split my coffee club in half
I brought a bag of Ethiopian natural process light roast to our monthly tasting last Saturday. Half the group said it tasted like sweet blueberries and tea, the other half said it was sour and underdeveloped. Our club president literally said 'that's not coffee, that's fruit juice' and walked out. The dark roast loyalists said I was ruining the craft by not roasting past first crack. But the third-wave folks argued that light roasts actually preserve the origin flavors better. I'm stuck in the middle now - what do you guys think, is there a right way to roast coffee or does it just come down to personal taste?
