Finally got my sauerkraut to stop going soft after 3 batches by using a different kind of salt.

Check your water source. Chlorine can kill the good bacteria you need for a proper ferment.

Yeah, the chlorine thing is real, I just boil my water first and it works fine.

Salt type makes all the difference.
