Wait what? Canning uses heat to kill everything, fermentation is all about the live cultures doing the work! That's a huge difference in how you do it and how it tastes. You don't even boil anything for most ferments, it's the total opposite.

Admit I ruined a batch of pickles by treating them like jam, so I get the confusion.
