Update: My local community garden set up a fermentation station last month and it's packed, lol. Is this a thing now?

My cousin tried to make sauerkraut last year and ended up with a jar of grey mush, so I feel your pain. It's easy to mix up the steps when you're just starting out. That community garden setup sounds like a great way for people to learn together and avoid those mistakes. I'm not surprised it's so busy.

Wait what? Canning uses heat to kill everything, fermentation is all about the live cultures doing the work! That's a huge difference in how you do it and how it tastes. You don't even boil anything for most ferments, it's the total opposite.
