I used to dread making centerpieces, they always looked lopsided. Pulled off a symmetric design for a big anniversary party yesterday and the client cried happy tears.

Remembered my friend who used to run a tiny catering gig... she always said messy food spreads felt more homey. Then she did this one baby shower where the mom wanted everything perfectly mirrored on the table, even the cucumber sandwiches. She thought it would look stiff but when the client saw it she actually cried, said it looked like a dream. Changed my friend's whole idea about order making things feel cold.

So wait, are we saying tears are the new review system for caterers? Like, if you don't cry at the cucumber sandwiches, it's a fail? I guess my idea of a good spread is if no one gets food poisoning, but hey, what do I know. Maybe I should start arranging my snack plate like a chessboard to see if it brings on the waterworks.

I always went for wild, uneven arrangements because I thought perfect symmetry looked cheap. Then I did a simple mirrored design with twelve white roses and some baby's breath for my sister's wedding... changed my whole outlook. Now I see how balanced pieces can feel really peaceful and put together.
