I shot a wedding in Denver with two different audio setups and the difference was huge

Honestly it's part of a bigger thing where people now expect every personal moment to look like a movie. You see it with Instagram photos that are way too edited, or even just filtering out a kid crying in a family picture. That background laughter or a car driving by in your wedding video? That's real life happening. Doesn't that make it more genuine in the end?

I finally got to work on the new hospital wing project downtown... after six months of just doing permit revisions.

Know that feeling all too well.

PSA: Stop buying those tiny spice jars at the store

Convenient? Maybe for the first week. Then you're shaking a nearly empty jar over a hot pan every other day. I switched to buying big bags of stuff like turmeric and coriander from a local spot. I keep one small jar in the cabinet and the bag in a dark cupboard. Refilling it takes two seconds and I never run out mid recipe. It's the opposite of a hassle.

Overheard a line cook say they never taste the food before it goes out

That's a huge red flag honestly. Even on a slammed line you gotta do a quick check for seasoning, especially with sauces or soups. Visual only works for stuff like toast or maybe fries like olivercraig said, but even then. Brian_taylor15, if the cooks aren't tasting, that's probably why your food is hit or miss. Places get lazy and then everyone gets a bland or salty plate.
