PSA: My neighbor in Charlotte just tried to smoke a brisket in 6 hours
He used his gas grill on high, said it was 'just as good'. Has anyone else had to gently correct a friend's BBQ timeline?

That's just grilled beef at that point. You gotta give it the time it needs.

Right? "Give it the time it needs" is the whole secret. I've rushed it before and been so mad at myself.
