Saw a guy in Kansas City run a brisket flat through a meat slicer

I always thought slicing brisket by hand was the ONLY way to do it right. Watched this pitmaster at Slap's BBQ in KC run a whole flat through an electric deli slicer last weekend. It came out PERFECTLY uniform, like 1/8 inch slices every time. He said it keeps the meat from shredding apart when you're doing a big catering order. Has anyone else tried this or am I crazy for thinking it might work?

Nah, hand slicing is overrated for volume. Uniform slices are better anyway.

A meat slicer for brisket? That's like using a laser level to hang a picture frame. Works great but feels wrong. Hand slicing is more about the ritual than the result, especially when you're feeding a crowd. Let the man slice his brisket however he wants, it's not like he's committing a crime against barbecue.
