Shoutout to the old pitmaster who told me to stop flipping my ribs every 10 minutes

I used to open my smoker like every 15 minutes to check on ribs and flip them around. Back in March at a comp in Kansas City, this old guy named Roy said 'boy you're letting all the heat out each time.' He showed me his method where he just sets them and forgets for 3 hours with a water pan. Now I only touch my ribs once to wrap them and they come out way more tender. Anyone else used to micromanage their smoker like I did?

Oh man, I learned that lesson the hard way too. Used to think I was being attentive but really I was just wrecking my temp swings and drying out the meat. Now I treat my smoker like a hot oven - open it only when I mean business.

Buddy of mine from work named Tony had the exact same problem back when he first got his WSM. He was out there with a spray bottle every 20 minutes basting his ribs and flipping them around like he was auditioning for a barbecue infomercial. One weekend we were both smoking at his place and I swear he opened that lid at least 8 times in the first hour. I finally told him to just shut the damn door and leave it alone and he got real defensive about it. Next time we cooked together he tried the set and forget method and his ribs came out so much better he texted me a picture of them with a crying laughing emoji. Now he brags about how little he touches his smoker and acts like he invented the whole idea.
