Why does nobody talk about how long it takes to cook dried beans...
I was in my truck outside Phoenix last week, soaked some pintos for 8 hours, then simmered them for 3 more, and they were still crunchy... what am I doing wrong here? Anyone got a faster way to do this without using canned?

Did you soak them with baking soda? My friend swore by that trick after a similar disaster, they finally softened up.

You soaking them in tap water? Because depending on where you live, hard water messes with beans. The minerals in hard water can keep beans from softening no matter how long you cook them. Try using filtered or bottled water next time, throw a little baking soda in the soak, and see if that fixes it. That might be your problem if you're in Phoenix or anywhere with limestoney tap water.
