Wasted $150 on a fancy boning knife that was completely useless

I bought this high-end boning knife online last month, thought it would make trimming briskets a breeze. Thing was so flexible it bent like a wet noodle on the first brisket I tried. Lost my grip and nearly sliced my thumb open. Anyone else get burned by a knife that looked good but couldn't handle real work?

Yeah, I've noticed this happens with a lot of "pro grade" kitchen gear. They design stuff for YouTube chefs who just want to show off techniques, not for someone who actually has to break down a whole packer brisket on a Saturday afternoon. You see it in everything from knives to tongs to cutting boards - they look amazing but bend or slip or just don't hold up under real pressure. I'd rather have a $40 Victorinox that's a little ugly but works every time than another fancy thing that nearly costs me a finger.

Flex boned me too man, damn near lost a finger on some ribs.
