I wasted $150 on a Japanese mandoline that rusted after one week

Bought one of those fancy metal mandolines from a chef supply store online. Said it was stainless steel. Used it for prep on Monday, washed it normal dried it right away. By Friday there was rust spots all over the blade. Chef at the place I worked at laughed and said you gotta buy the plastic body ones for commercial kitchens. Wish I knew that before I tossed the receipt.

Oh man, that's rough. Ngl I had a similar moment of shame when I dropped like $80 on a "gourmet" mandoline and my buddy showed me his plastic one from the restaurant supply store that cost like 35 bucks. I thought I was being fancy and it just made me look like an idiot. Honestly my biggest flex now is that I can slice a potato with a plastic mandoline without crying about rust stains on my cutting board. Tbh your chef was probably holding back laughter the whole time, classic kitchen guy move.

I get what you're saying about the chef recommending plastic body ones, but I respectfully disagree with the idea that metal ones are a waste of money. I think the problem is more about buying from random online shops rather than tested commercial brands like Benriner that hold up way better. If you had gotten a well known brand instead of a fancy unknown one, that $150 would have bought you a tool that lasts years without rusting.

You ever actually own a Benriner or just read reviews online?
