My barista buddy in Portland told me my pour over technique was ruining the bloom phase.

He said I was dumping all the water at once instead of a slow spiral, so I started doing a 15-second pre-wet and letting it sit for 30 seconds before the main pour - the flavor difference was huge, has anyone else had to re-learn a basic step like that after getting called out?

Used to think dumping all the water fast was no big deal, but that slow spiral pre-wet totally changed my mind on the bloom. The flavor difference is wild once you get the timing right.

Hold up wait wait wait. You're telling me the order you pour the water in actually changes the flavor that much? I always just dumped it all in there fast because I'm impatient in the morning and figured it all ends up the same anyway. But now I'm kinda shook - I gotta try that whole slow spiral thing tomorrow. My coffee game might be way weaker than I thought this whole time.
