Okay but what does that even mean, chalk-marking? Like drawing on the sidewalk before it rains? That sounds like total magic, not science. Would love to see who paid for that study because the numbers seem way too perfect. Feels like one of those weird correlation things people run with.

Honestly, some people just want supermarket bread. You can't argue with taste buds that think Wonder Bread is the gold standard. Maybe offer a milder loaf option if you want the sale, but don't change your real sourdough. That stare she gave you says it all. She's not your customer.
