I read a piece in the Portland Mercury about how some shops change their beans or rush their training when they get too busy from hype. It made sense, that push for volume can really mess with the careful work that made them good in the first place.

Wait, you went to the actual hyped spots and they were still bad? That's wild lol. Had the same thing happen at that place with the pink mugs downtown, their espresso tasted like burnt water.

Online reviews for Portland coffee can be SUPER misleading. The best cups are often at the low-key places nobody talks about online.

But what if those quiet spots get popular because they're actually good? I've seen it happen a few times. That little place on Alberta, Kiosko, was a total hidden gem for years. Then someone wrote it up, the lines got long, and the coffee is still just as solid. Sometimes the hype finds the good stuff for a reason.
