Shoutout to the barista who told me to stop rinsing my filter papers

I was at my local shop in Portland last month and this barista watched me rinse my paper filter for a solid 30 seconds. She said I was actually washing out the paper fibers that help with extraction and making my coffee taste thinner. I started skipping the rinse on my V60 at home and man, my morning cup got way more body and sweetness. It felt weird at first not doing it since every YouTube guy preaches rinsing, but the results are real. Anyone else ditch the rinse and notice a difference?

You ever pour a cup and just know it's better even before you taste it? I was the same way, felt like I was breaking some sacred coffee rule at first. But after a week or so my V60 brews had this thicker mouthfeel and the sweetness just popped. I actually went back and did a rinse the other day just to see and yeah, it was noticeably thinner and kind of hollow tasting. Makes you wonder how much of that YouTube stuff is just tradition people repeat without testing.

Oh come on, you guys are actually falling for this? I tried skipping the rinse for a week and my coffee tasted like straight up paper. Like I was drinking a cardboard smoothie. Rinsing gets rid of that papery taste before it hits your brew, there's no way you're not tasting that.
