So tired of people using stale beans for espresso
My buddy just spent $60 on some fancy beans roasted 3 months ago and swore they tasted fine. I pulled a shot from my fresh bag roasted 5 days ago and the crema was night and day different. Why do people act like freshness doesn't matter for espresso when it totally makes or breaks the shot? Has anyone else had to deal with friends insisting old beans are just as good?

60 dollars for beans roasted 3 months ago sounds like a crime against your wallet more than anything else. I mean, is a slightly thinner crema really worth all that drama though...

My first espresso setup I spent $200 on beans that were already stale and convinced myself they were amazing because I didn't want to admit I wasted money.

Tell @colescott he's not alone, I did the EXACT same thing with my first bag of "premium" beans. Nobody wants to admit they bought old coffee so you just pretend the sour, flat shot is some complex flavor profile. The reality is that stale beans lose all their CO2 which is what gives espresso that beautiful thick crema and body. I literally told my friend to cup his 3 month old beans next to my fresh ones and he finally saw what I meant. Pulling a shot with beans less than 2 weeks old is non-negotiable for me now, the difference is like drinking swamp water vs a real espresso.
