Forgot to burp my jar. Best mistake ever.

Left my kimchi jar sealed for a week. Thought it was ruined. Opened it up. Fizz was perfect. No explosion. Flavor popped. Simple beats fancy airlocks any day.

Wait, so you didn't burp it at all for a whole week? I've tried that before and got a mess, but when it works, the flavor is next level. My best batch was when I forgot about it for five days. No fancy gear needed, just luck and good temps.

Honestly used to be super strict about burping every single day, thought that was the only safe way. This kind of accident makes you realize the microbes just do their own thing. My last batch I left totally alone for six days and it had the best sour kick. Tbh all that bubble and pop means it's working hard. Sometimes leaving it completely alone just lets the flavor build up right.

Yeah, it's a gamble every time. Stable room temps seem to help avoid explosions more than anything. Kimchi just does what it wants, really.
