I finally opened my first batch of fermented green beans from June and they were fizzy!

Fizzy ferments can be a bit too sour for my taste. I usually move mine to the fridge sooner to slow things down.

Yeah, that fizz is a sign they're still active. I had that happen with some pickles last year. I just burped the jar every day for a week until the bubbles stopped, then they were perfect.
