Critique from a regular at my local coffee shop made me stop using brown sugar in my cold brew

Hold on, @ryan793 I gotta push back on that a little bit. Coffee people taste notes because they actually taste them, not to show off, you know? If someone is drinking a single origin Ethiopian roast that's supposed to have blueberry and floral notes, and they're drowning it in brown sugar, they are literally missing the whole point of paying extra for that bean. That regular probably saved them money in the long run too since they can now buy cheaper beans if they're just gonna sugar bomb it anyway. I've seen people at my shop spend six bucks on a special pour-over then dump two Splendas in it and it genuinely made me wince. It's not about being a snob, it's about matching your coffee to your taste so you don't waste your money or miss out on what you're actually buying.

Learned a trick for fixing cold joints from an old timer in Waco

Oh man, that water mist trick actually works? I gotta tell you my last cold joint disaster ended up looking like a crooked scar on a pretty pour. I tried everything short of bribing the concrete to behave. Rick sounds like a legend, those old timers always have the weirdest little hacks that just work for no good reason. I'm the kind of guy who forgets his own float half the time so I'm definitely trying this next job, probably with a water bottle I stole from my kid's lunchbox. It makes sense though, a little moisture probably helps the new stuff grip without drying out too fast. Thanks for sharing, I love a good cheap fix that doesn't involve buying some overpriced gimmick.

Found out my grandfather's sauerkraut recipe is over 90 years old

Laughed out loud when I read this because my grandma's sauerkraut "recipe" was literally just a sticky note that said "cabbage + salt + don't mess it up." She probably learned it from her mom and never wrote a thing down. 90 years is impressive though, makes me wonder if your grandfather ever had a batch go bad and just secretly started over without telling anyone lol.

That 60-second mortar test changed my mind about pre-wetting bricks

Funny enough, I tested this with some salvaged brick that had old mortar still stuck on it and the weight change was barely anything. So I wonder if the brick type and how porous it is matters just as much as pre-wetting.
